The joys of eating gluten-free

I was recently diagnosed with Celiac's Disease, which means that I can't have anything with gluten in it.   It's been an adventure just trying to find something that I can eat for lunch.  I definitely have not been eating nearly as much as I usually do! 

Each Thursday, Sonic has 75 cent cheeseburgers and I always look forward to that day.  Unfortutely for me, I can no longer eat hamburger buns so I decided to improvise.  A couple of days prior, I bought a bag of 80 corn tortillas because a friend had suggested that I try eating those.  I decided to still order my Sonic cheeseburgers, but instead of eating them on bread, I would eat them on my corn tortillas.  Not recommended......it was disgusting.  I'll continue to post my adventures with gluten-free eating.

The best place in the whole wide world


I absolutely and completely adore Grand Teton National Park.  Maybe I'm a little biased since my family has gone there for vacation every summer since I was born.  And also because I worked there for a season and was able to experience the magic every single day for 4 months.  If you haven't been, I strongly encourage a visit.  If you need a tour guide, I'd be more than happy to accompany you and take you to the best places!

Summer in the Tetons is wonderful, but in these past few years I have discovered that winter in the Tetons is amazing!  It's really, really cold but with that comes very few people and lots of wildlife.  A couple of days ago I was lucky enough to go cross-country skiing in the Oxbow Bend area of the Snake River.  It was an overwhelming feeling to be on the sparkling, untouched snow.  All that I could hear were the sounds of nature...the trumpeter swans, the flowing river, the cool breeze, the river otters playing on the ice.  The sun was bright and warm, whispy clouds painted the sky, the river a deep rich blue that glittered as it reflected the light.  An overwhelming feeling of grandeur and awe overcame me to think that I could be in such a beautiful place.  I am not a graceful skiier and I hope to have many more opportunities to practice.  Maybe next time I ski I won't go somewhere so beautiful so that I don't get distracted :)  Here are a couple pictures.....


































PS- We saw 10 MOOSE at the same place, same time.  A whole group of them.  I've never seen anything like it!  This is just one of them.

The Beginning

I have been wanting to start a blog for a while, mostly because I feel like I have many experiences that really mean a lot to me that I would like to write down and share.  Life is such a gift...all of the ups and downs!

Those that know me best know that I am a bit of a traveler, a nomad, a wanderer.  Not a wanderer in the sense that I don't have direction or purpose.  I feel as though I'm a wanderer in the sense that I love to experience, explore, and take advantage of each opportunity that I am blessed with.  Some of the most amazing adventures of my life have taken place as I explore the beauties of nature.  Some of the greatest learning experiences come as I take the time to soak in my surroundings and reflect on what I see before me.

Each day I get a little more "hippy-ish" and it's been fun to see my personality develop over these past few years.  I LOVE my chacos.  They are my shoe of choice for all my adventures and I look forward to many great experiences ahead!
